They tie the estates back to the merchant city that sold their wine, and that link is what stops the appellation map from looking arbitrary. ## Left Bank Gravel, Right Bank Limestone, Two Different Wines The Garonne runs up from the Atlantic, meets the Dordogne, and together they become the Gironde estuary. Everything west and south of that water is the Left Bank. Everything east and north is the Right Bank. Which side you are standing on decides the grape, and the grape decides the rest. The Left Bank is gravel, dumped there over a very long time by ice and river. Gravel drains fast and holds heat, which suits Cabernet Sauvignon, so Left Bank blends lead with Cabernet and come out structured, tannic, and built to sit in a cellar for twenty years. This is Médoc country: Saint-Estèphe, Pauillac, Saint-Julien, Margaux. Graves and Pessac-Léognan sit closest to the city itself. The Right Bank is clay and limestone. Cooler, damper ground that Cabernet struggles in and Merlot thrives in, so Saint-Émilion and Pomerol lead with Merlot and land softer, rounder, and drinkable a lot younger. Same region, same weather, different soil, different wine. If your group splits between guys who read about this stuff and guys who just know they like red, that contrast is the easiest way in. Pour a Pauillac and a Saint-Émilion side by side and everyone at the table gets it without a lecture. The brokers who assembled it never tasted anything. They sorted the châteaux by what the wine had been selling for between 1815 and 1855, handed in the list, and that list is still in use today. Five properties sit at the top as First Growths: Lafite Rothschild, Latour, Margaux, Haut-Brion, and Mouton Rothschild. Three of the five are in Pauillac alone. Haut-Brion is the outlier, the only First Growth outside the Médoc, sitting in what is now Pessac-Léognan out toward the suburbs. In 170 years, exactly one château has been formally promoted: Mouton Rothschild, moved up from Second Growth in 1973 by ministerial decree. Knowing the backstory saves you money. A snapshot of the market two centuries ago is not a ranking of what is in bottles now, and plenty of properties below the top tier are making better wine today than some of the names above them. The Romans planted these slopes. Pilgrims walking to Santiago de Compostela came through, which is why churches, monasteries, and hospices start appearing here from the 11th century onward. Two thousand years of people doing roughly the same work on the same hillsides is what the listing recognizes. Saint-Émilion also re-ranks its own estates about every ten years, and the last round got ugly. The 2022 classification was the seventh since 1955 and covered 85 properties. Before it was even published, Cheval Blanc and Ausone pulled out, and Angélus followed in January 2022. Their objection was the scoring formula: reputation, marketing, and tourism carried 35 percent of the grade, while the terroir itself carried 15. The top tier dropped from four names to two. ## What to Do in Bordeaux Before You Head for the Vineyards Bordeaux made its money as a port and the city still looks like it. The historic center carries a UNESCO listing of its own, inscribed in 2007 as [the Port of the Moon](https://whc.unesco.org/en/list/1256), and it holds more protected buildings than any French city except Paris. The name comes from the crescent the Garonne makes as it bends through town. The quays run for kilometers along that bend and they are the easiest walk in the city. Place de la Bourse faces the water with the Miroir d'Eau in front of it, a shallow sheet of water that mirrors the whole facade and then fogs over on a cycle. La Cité du Vin opened in 2016 out at the Bassin à Flot, in a building shaped after wine swirling in a glass. It covers wine worldwide rather than just the local stuff, which makes it a better day-one stop than most groups expect. If you want a château without leaving town, Château Pape Clément sits in Pessac-Léognan on the edge of the suburbs. Vines went in there in 1300, a gift to Bertrand de Goth when he was made Archbishop of Bordeaux. Five years later he became Pope Clement V and left the estate his name. ## Splitting Three or Four Days Between the City and the Vineyards A Bordeaux [guys trip](https://www.mantripping.com/guys-trip.html) splits cleanly if you base in the city, and if you can, base in Chartrons. Flemish, Irish, and German négociants settled that stretch of riverfront in the 17th century to ship Bordeaux wine home, building houses over ground-floor warehouses where the barrels waited on a boat. It is quieter at night than the old center and it is the part of town that explains the rest of the trip. Saint-Émilion is the easy day. Direct trains leave Bordeaux Saint-Jean and arrive in about 35 minutes, roughly ten a day, so there is no car and no designated driver argument. The Médoc is a drive: Pauillac sits 52 kilometers out, just under an hour, and the D2 through the châteaux is the road you want. There is no useful rail option, so that is the day you hire a driver or pick the guy who is sitting this one out. A four-day shape that works: day one in the city on foot, day two on the Right Bank in Saint-Émilion, day three up the Médoc with a driver, day four left open for Arcachon, a market morning, or going back to whatever the group liked best. Book the classified châteaux well ahead. They take appointments, not walk-ins, and the good September and October slots go months out because harvest is when everyone wants to be there. Either way the city is where you start. ## Food You Must Try: Oysters at the Capucins and Steak Over Vine Cuttings Entrecôte à la bordelaise is the dish to know: a thick rib steak under a red wine, shallot, and bone marrow sauce. Done right, the steak is grilled over sarments, the dried vine cuttings left behind by winter pruning, which puts a smoke on the meat you cannot fake with charcoal. Oysters come from the Bassin d'Arcachon, about 50 minutes away by direct train with departures every half hour. In the city, go to the Marché des Capucins on a weekend morning: a dozen oysters, a warm crépinette alongside, a glass of dry white, standing up, before eleven. Nobody there thinks that is strange. Then canelés, the small caramelized cakes with the soft custard middle, in every bakery window in town. ## Exploring The Region Allows You To Experience The Difference Between Drinking Bordeaux and Understanding It Plenty of guys come home from Bordeaux with a photo of a château and a bottle they are not sure what to do with. The ones who come home with more than that gave each side of the river its own day. One concrete thing to do, if you take nothing else from this: on your Left Bank day, ask whoever is pouring to walk you out and show you the gravel. Most will, and most will let you pick a few up. Those stones are the argument for why Cabernet Sauvignon ended up on this side of the water and Merlot ended up on the other, and a handful of them will teach you more than a dozen tasting notes. Do the same thing in Saint-Émilion, where the village sits on the limestone its own church was carved down into, and the map stops being a list of names.
