Espresso Pumptini fall coffee cocktail with star anise, pumpkins, and baking spices

The weather is turning cold, and while a shot of whiskey can get you going, a coffee cocktail does two jobs at once: the caffeine gets you moving and the alcohol brings that warm glow as blood flows toward your skin. There's nothing wrong with pouring rum, tequila, or vodka into your mug and calling it a day, but we can do better than that. These eight fall coffee cocktails came in from bartenders and spirits brands, and they're a lot more fun to make at home than another rum and coffee.

Coffee cocktails belong to the part of fall when the weekend with the guys moves off the patio and indoors, whether you're planning to host a guys night in or bringing a thermos to the tailgate. One catch with that warm glow: your skin feels warmer while your core temperature drops. Enjoy it next to the fire pit, and still wear the jacket.

If I were picking one to start with, it would be the Espresso Pumptini if you own a kitchen torch and the Horchata Café Latte if you own a blender. A few of these brands showed up in our Cinco de Mayo cocktails this spring, and it's fun to see what the same bottles do once the leaves turn.

Bartender John Record swaps the vodka in an espresso martini for reposado tequila and shakes in pumpkin purée, then torches a line of pumpkin spice sugar across the foam. The aged tequila adds oak and vanilla, and it keeps the drink from getting overly sweet.

Ingredients

  • 1.5 oz Santa Familia Reposado Tequila
  • 3/4 oz pumpkin purée
  • 3/4 oz Mr. Black Coffee Liqueur

  1. Mix the pumpkin pie spice, cinnamon, and sugar in a small dish and chill a martini or coupe glass.
  2. Add the tequila, pumpkin purée, coffee liqueur, espresso, and Fee Foam to a shaker and dry shake without ice for 10-15 seconds.
  3. Add ice and shake again for 10-15 seconds, until cold.
  4. Fine-strain into the chilled glass and let the foam settle.
  5. Sprinkle a thin line of the spice sugar across the foam, pass a culinary torch over it until the sugar melts, and set the star anise in the center.

  • 1.5 oz Dulce Vida Organic Reposado Tequila
  • 1 oz simple syrup
  • 1 oz espresso
  • 1/2 oz coffee liqueur
  • Espresso beans, to garnish

Method

  1. Add the tequila, simple syrup, coffee liqueur, espresso, and ice to a cocktail shaker.
  2. Shake until chilled and strain into a martini glass.
  3. Garnish with espresso beans.

Oxbow Rum Distillery in Baton Rouge, Louisiana, makes False River from sugarcane, and its barrel-aged rum does the job vodka usually does in an espresso martini. It's a three-ingredient build, and the rum brings a caramel note that tequila and vodka don't.

Ingredients

  • 2 oz False River Barrel Aged rum
  • 1 oz fresh espresso
  • 1/2 oz coffee liqueur

Method

  1. Combine all ingredients in a shaker tin and shake with ice until cold.
  2. Strain into a martini glass and garnish with coffee beans.

Espressoless Martini by Milagro Tequila

Milagro gets the coffee into this one without any espresso at all. A homemade syrup simmered with a vanilla bean and a handful of coffee beans carries the flavor, and Milagro Cristalino keeps the drink clear and bright instead of dark and creamy.

Ingredients

  • 2 parts Milagro Cristalino
  • 0.75 part premium triple sec
  • 0.25 part vanilla-coffee bean syrup
  • Coffee beans, to garnish

Method

  1. For the syrup, add simple syrup, one vanilla bean, and a handful of coffee beans to a pan on low heat and simmer gently, stirring occasionally.
  2. Remove from the heat and cool in the refrigerator for 30 minutes to an hour, then strain out the beans. The syrup keeps up to 30 days refrigerated.
  3. Shake the tequila, triple sec, and syrup with ice, strain into a chilled martini glass, and garnish with coffee beans.

PSL Tipsy Jitters by Alex Howard at Martha My Dear

Alex Howard, bar director and co-owner of Martha My Dear in Nashville, Tennessee, brings this pumpkin spice version of the bar's year-round Tipsy Jitters back every fall. It's stirred rather than shaken, and a float of Angostura-spiked cream sits on top.

Ingredients

  • 1 oz vodka (aged rum or Irish whiskey also work)
  • 1 oz cold brew concentrate (the bar uses a 5:1 concentrate from Elegy Coffee, or steep 5:1 water to ground coffee by weight for 24 hours and fine strain)
  • 1/2 oz spiced pumpkin syrup
  • 1/4 oz coffee liqueur (Howard recommends Caffe Lolita)
  • 1/4 oz Faretti Biscotti Liqueur
  • Angostura cream: about 1.5 oz heavy cream, a bar spoon of demerara syrup, and 3 dashes Angostura bitters

Method

  1. For the spiced pumpkin syrup, simmer 2 cups of water with 5 cinnamon sticks, 3 allspice berries, 3 cloves, and a pinch of ground ginger for 10 minutes. Strain, weigh, stir in an equal weight of white sugar, then blend with a heaping scoop of pumpkin purée. It keeps about 4 weeks.
  2. Stir the vodka, cold brew, syrup, and both liqueurs in a mixing glass with ice and strain into a rocks glass over fresh ice.
  3. Dry shake the cream, demerara syrup, and bitters until the cream thickens, then pour it slowly over the drink.
  4. Grate cinnamon over the top.

Want it hot? Swap the cold brew for 5 oz of hot coffee, build it in an Irish coffee glass, and float the cold cream on top. More at Martha My Dear.

How To Build Your Own Fall Coffee Cocktail

Once you've made a few of these, the pattern is easy to see: a spirit, a coffee, a sweetener, and sometimes cream. Change any one of those and you have a new drink, so have fun with it.

Match The Spirit To The Coffee

Reposado tequila and aged rum pick up the chocolate and caramel notes in a darker roast, which is why so many of the recipes above lean on them. Vodka stays out of the way and lets the coffee and cream lead, so reach for it when the syrup is the star.

Try A Spirit Most Bars Don't Stock

If you want to get more creative, go past the usual rum, tequila, vodka, and whiskey. Lambanog, the coconut palm spirit from the Philippines, or Vietnamese rượu đế, a rice spirit, will give a coffee cocktail a flavor your buddies won't have tasted before. Start with half an ounce alongside your usual base spirit, then work up from there.

Watch The Caffeine After Dark

The CDC warns that caffeine can mask how drunk you feel without lowering how drunk you actually are, so the third espresso martini feels lighter than it is. Count your rounds instead of trusting how alert you feel, and switch to decaf espresso once the sun goes down.
